Mmmmmmm…. Rewena bread (expensive but, $7 a loaf!!)
I’m going to eat a slice with loads of butter. When I buy some butter, that is.
Now all I need is some marinated fish and it’ll be like 1983 again (the year I worked in a restaurant that used to serve this delicacy).

I have a theory there might be some similarity with appalacian ‘salt rising’ bread

might well be sourdough, but afaik it’s the right recipe.

Does indeed look like a sourdough. But I’ll retain my theory ‘cos it sounds cool.
People do use all sorts of crazy stuff in sourdough starters (instructions in __Beyond Snout To Tail__ include rhubarb) – I understand what works best is the outsides of vegetable matter (including grains). I assume the ingredients make some sort of difference, microbe-wise.
I’ve just realised I was googling ‘rewana’. You get a lot more results for ‘rewena’.

Maori Bread/ Rewana bread never should have any yeast/salt/BP/ or baking soda in it.
Just Kumara/Potato/Maori Potato, Flour, Sugar and Water.
